Chocolate tofu and chia pudding
- 1 cup silken tofu
- 1/2 tablet of dark chocolate
- 1 tbsp maple syrup
- 2 tbsp of chia seeds
- 2 tbsp of Huaora Workout
- 1/2 cup coconut milk
Chia pudding layer
First of all we will prepare the chia pudding: mix together the chia seeds, coconut milk, maple syrup and vanilla. If you’re using a mason jar, you can put the lid on and shake the mixture to combine everything. Once the chia pudding mixture is blended, let it sit for 5 minutes, and give it another stir/shake to break up any clumps of chia seeds. Cover it afterwards and leave it in the fridge to “set-up" for 1-2 hours.
Chocolate tofu pudding layer
Melt the chocolate in the microwave in 30 second intervals, stirring each time, until the chocolate is liquid. You can also do it in a bain-marie. Set aside to cool at room temperature. Meanwhile, place the silken tofu with 2 tbsp of Huaora Workout in a food processor and blend until very smooth. Add the melted chocolate and blend it toghether.
Scoop the mixture into 3 glasses, and refrigerate for 30 minutes.
To serve, garnish with chocolate shavings, raspberries and blackberries. Leftovers may remain in the fridge for up to 3-4 days
